The 50 heads of European states and governments who will attend the European Political Community Summit on June 1 will be served with the traditional dessert Black Baba and an exceptional 2018 Riesling ice wine. Managers at Mimi Castle, which hosts the event, have summoned an army of waiters and chefs, while a quality control committee has been on site for a month.
Castel Mimi director Adrian Trofim says the Black Baba dessert is something which they are very proud of. During a press tour, journalists were served ice cream made from locally made Merlot.
“Our grandmother is from the north of Moldova. She made Baba Neagra all her life and we decided to include it in our menu, thus becoming the first restaurant to introduce this dessert. We revived it and today you can find it in many restaurants. It takes eight hours to prepare. It’s just flour, eggs, butter and baking soda. It is kept in the oven for eight hours, after which it takes on that dark brown color. That is, no other ingredients such as cocoa are added”, Trofim told reporters.
The Riesling ice wine is from the vines of Speia. “The Riesling was kept on the vine until winter. For three days we had temperatures of -8 degrees Celsius and our team went to pick it specifically after snowfall. It was brought carefully, pressed very carefully. Fermentation took a year or so because, the grapes being rich in sucrose, the process took a while. It was bottled in 2020. We don’t have much of that kind of wine anymore because every winter it’s warmer and warmer and we can’t get the genuine thing. It is one of the last ones we were able to make”, said Adrian Trofim.
The delegations attending the summit will also be able to visit an exhibition featuring 24 works by artists from Romania and Moldova. “They are contemporary artists, but also emeritus artists of the 20th century. We chose them to be paintings of women, because we want to touch on the subject of the involvement of women in general and their participation in the decision-making processes of our society. Certainly, art is that field that helps us to be more aware, to understand important social, economic and political processes”, said Cristina Frolov, president of the Constantin Mimi Foundation.
The summit will take place at Mimi Castle in Bulboaca village, Anenii Noi district, located approximately 35 kilometers southeast of Chisinau.
